Makes 2 Servings
- 5ounces cooked chicken breast, shredded
- 1/4cup red onion, finely chopped
- 2tablespoons parsley, finely chopped
- 1/4cup plain greek yogurt
- 1/4 lemon, juiced and zested
- 1dash salt and pepper, to taste
- 4slices sourdough bread, toasted
In a medium-size bowl, add the chicken, onion, parsley, Greek yogurt, lemon juice, zest, salt, and pepper.
Mix ingredients in the bowl well to incorporate.
Spread the chicken evenly over one slice of sourdough; close sandwich with another slice of bread.
